Albacore Asian Stir Fry

Albacore Asian Stir Fry

Ingredients
  

  • 2 - 5 oz . cans white albacore tuna packed in water
  • peanut oil
  • 1 small sweet onion cut into thin strips
  • 2 garlic cloves minced
  • 1 - 16 oz bag frozen stir-fry vegetables
  • 2 Tbsp soy sauce
  • 1 lemon juiced
  • hot cooked brown rice for serving

Instructions
 

  • Drain Tuna.
  • Heat oil in a skillet until very hot.
  • Add the onion and garlic and stirring quickly for approximately.
  • Add frozen vegetables and cook, stirring until vegetables soften, about 3 to 5 minutes.
  • Cook on a high of heat as possible, but do not burn.
  • When vegetables are tender, stir in the soy sauce, lemon juice, add the albacore.
  • Remove from the heat, and stir gingerly to combine.
  • Serve over hot cooked brown rice.

Salmon Sticks

All Grown Up Salmon Sticks

Ingredients
  

  • **DIP**
  • 1/3 cup olive oil mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1/2 lemon juice and zest
  • 1 tsp chopped fresh dill
  • **SALMON STICKS**
  • 1 Egg
  • 1 cup breadcrumbs
  • 2 Tbsp finely chopped flat leaf parsley
  • 2 Tbsp Parmesan cheese
  • 1/4 tsp black pepper
  • 1 lb fresh salmon cut into thin strips

Instructions
 

  • **DIP**
  • In small mixing bowl, whisk together may, yogurt, lemon juice and zest and dill, until smooth.
  • Refrigerate while you are preparing and cooking fish sticks.
  • **SALMON STICKS**
  • Preheat oven to 400°F
  • In mixing bowl, whisk the egg whites until frothy.
  • In another mixing bowl, conbind breadcrumbs , parsley, Parmesan cheese, and black pepper,
  • Dip each fish piece in eggs and then breadcrumb mixture, (making sure on pieces are evenly coated) then place fish on baking rack on a baking sheet.
  • Bake for 20 minutes, carefully turn each piece 1/2 way through cooking time.
  • Remove from oven and let cool slightly
  • Serve with dipping sauce.

Ingredients
  

  • 16 pieces Rye or Pumpernickel bread
  • 1/2 cup cream style horseradish
  • 16 thin slices smoked salmon
  • 16 thin slices of radishes circles
  • 16 small sprigs of dill

Instructions
 

  • Arrange break on serving tray.
  • Spread horseradish on each piece evenly.
  • Arrange the 16 pieces cocktail bread on a serving tray.
  • Top with thin slice of salmon.
  • Place a think radish slice on each, and garish with a sprig of dill

Scallops In Creamy Cucumber Sauce

Ingredients
  

  • 2 large seedless cucumbers-diced
  • 1/2 tsp kosher salt divided in half
  • 3 tsp butter divided in half
  • 3 tsp olive oil divided in half
  • 1/4 cup sour cream
  • 1 1/2 lbs sea scallops patted dry
  • 1/4 tsp black pepper
  • 2 cups hot cooked brown rice for serving

Instructions
 

  • Dice cucumbers, then put in a colander over plate. Sprinkle with 1/4 tsp salt and set aside for 30 minutes. This will help the excess water come out of the cucumbers.
  • In skillet over medium-high heat, add 1/2 the butter and 1/2 the olive oil.
  • When oil and butter are hot, add the drained cucumbers and cook, until cucumbers soften and lightly browned (stir often).
  • Add the sour cream,cook and stir for approximately 1 minute or until creamy and hot.
  • Add the remaining butter and olive oil to skillet over medium-high heat.
  • Add the scallops to hot butter and oil, sprinkle with the remaining salt and all the black pepper and cook, turning, until lightly browned. Do NOT under cook the scallops.
  • Add cucumber mixture back in to skillet and mix well until evenly heated.
  • Serve over 1/2 Cup brown rice.

  • 1 can 5 oz salmon, skin and bones removed, drained
  • 1 whole egg
  • 1 Tbsp finely chopped green bell pepper
  • 1/2 cup bread crumbs
  • 1 tsp lemon juice
  • 1/2 tsp dried thyme
  • salt and pepper to taste

Instructions
 

  • Mix all ingredients together in a large bowl.
  • Make 4 to 5 patties out of mixture.
  • In large skillet cook patties over medium-high heat in Olive Oil until browned on both sides.
  • Serve on buns.

Roasted Citrus Curried Shrimp Salad

Ingredients
  

  • 2 large oranges peeled, segmented
  • 1/2 tsp kosher salt divided in half
  • 2 lbs shrimp cleaned
  • 1 Tbsp olive oil
  • 1 Tbsp curry powder
  • 1/2 tsp black pepper
  • Mix Greens for serving over

Instructions
 

  • Preheat oven to 400° F.
  • Cover 13x9 baking pan with parchment paper.
  • Place orange pieces evenly on 13x9 pan.
  • Sprinkle oranges with 1/4 tsp of salt and bake for 10 to 12 minutes or until slightly browned and the edges are dry.
  • Remove from oven.
  • Put shrimp in a bowl with 1/4 tsp salt, the olive oil, curry powder, and the black pepper.
  • Add Shrimp to oranges and stir together. Return to oven and bake for 10 minutes or until shrimp is completely cooked.
  • Server over mixed salad greens.

Ingredients
  

  • 2 tablespoons butter
  • 1 teaspoon onion - chopped
  • 1 tablespoon parsley - chopped
  • 1 1/2 cups soft shell crabmeat - chopped
  • 2 tablespoons flour
  • 2 cups chicken or seafood broth
  • 2 cups cream -- light
  • 1 pinches cayenne pepper
  • salt to your taste

Instructions
 

  • Melt the butter in sauce pan.
  • Add the onion and cook until golden.
  • Add the crabmeat and parsley and cook over low heat stirring constantly for approximately 5 minutes.
  • Add the flour, stir to blend and cook for 3 minutes more
  • Stir in the chicken broth and simmer for 20 minutes.
  • Add the cream and cayenne pepper
  • Simmer for 5 more minutes.
  • Server warm.

Ingredients
  

  • 1 cup water
  • 1/2 cup milk
  • 1/2 teaspoon dill weed
  • 1/4 teaspoon salt
  • 6 slices process American cheese
  • 1 1/2 cups minute original rice uncooked
  • 1 can tuna -- drained
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Bring water, milk, dill and salt to boil over medium head in a saucepan.
  • Add cheese; cook until melted
  • Stir in MINUTE Rice, Tuna and parsley; cover
  • Remove from heat.
  • Let stand for approximately 7 minutes so rice will absorb all water.

  • -----sauce-----
  • 1 - 15 oz can tomato puree
  • 1/2 cup water
  • 3 tablespoons white vinegar
  • 3 tablespoons Worcestershire sauce
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon garlic powder
  • 1 tablespoon mustard
  • 1/4 teaspoon salt
  • 1/3 teaspoon pepper
  • 3 tsp. sugar or sugar substitute
  • 12 ounces cooked shrimp

Instructions
 

  • In Saucepan, combine all ingredients, except sugar and shrimp.
  • Slowly Bring To Boil, stirring when needed.
  • Remove from heat and stir in sugar.
  • Add Shrimp to sauce.
  • This can be served over rice or a egg noodle bed.

Ingredients
  

  • 1 1/2 pounds prawn
  • 2 bell pepper
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • salt to taste
  • 1 tablespoon cooking oil
  • 8 ounces cherry tomatoes
  • 1 teaspoon lemon juice

Instructions
 

  • De-vein and clean the prawns
  • Mix chili powder, salt, lemon juice, and turmeric powder with 1 tablespoon of cooking oil in a metal bowl
  • Marinate the prawns in the mixture
  • Let rest for 1 hour
  • While waiting, quarter the bell peppers and remove their seeds
  • Quarter the tomatoes
  • Spear the prawns, capsicum, and tomatoes onto the skewers. Alternate as you go
  • Place on hot grill and cook until well done, turning occasionally to avoid burning them
  • Serve Immediately

  • 1/2 cup butter
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried tarragon
  • 3/4 teaspoon salt
  • 1 tablespoon lemon juice

Instructions
 

  • Melt butter in a small saucepan.
  • Combined all ingredients in saucepan.
  • Brush on seafood and bake, bbq or fry.
  • Goes good on shrimp, crawfish, crab and lobster.
  • Makes approximately 1/2 cup.

Ingredients
  

  • 1 bag 16 oz frozen mixed vegetables
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 3 cups cooked rice
  • 1/2 cup diced green pepper
  • 1/4 cup diced onion
  • 2 teaspoons dried dill
  • 1 can 12 oz white tuna in water, drained
  • 2 Tablespoon butter
  • 1 cup bread crumbs

Instructions
 

  • Preheat oven to 375°F
  • Lightly Grease 2 quart baking dish.
  • Mix together vegetables, mayonnaise, sour cream, cooked rice, green pepper, onion and dried dill.
  • Mix in Tuna.
  • Place in Greased baking dish.
  • In a small saucepan, melt the butter, add the bread crumbs and heat just until combined, then spoon on top of the tuna mixture in baking dish.
  • Bake (uncovered) in oven for 30 minutes or until hot and lightly browned on top and around the edges.
