Ingredients
  

  • 1 1/2 lbs ground beef pork or turkey
  • 1 cup milk
  • 1/4 teaspoon dried sage leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon ground pepper
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 clove garlic
  • 1 small onion finely chopped
  • 1/2 cup BBQ Sauce

Instructions
 

  • Preheat oven to 350°F.
  • Mix together all ingredients, except BBQ Sauce.
  • Make in to loaf shape and place in 13x9 pan.
  • Top with BBQ Sauce.
  • Bake for 60 to 75 minutes.

Pink Salmon Patties

Pink Salmon Patties

Ingredients
  

  • 1 can 5 oz salmon, skin and bones removed, drained
  • 1 whole egg
  • 1 Tbsp finely chopped green bell pepper
  • 1/2 cup bread crumbs
  • 1 tsp lemon juice
  • 1/2 tsp dried thyme
  • salt and pepper to taste

Instructions
 

  • Mix all ingredients together in a large bowl.
  • Make 4 to 5 patties out of mixture.
  • In large skillet cook patties over medium-high heat in Olive Oil until browned on both sides.
  • Serve on buns.

Italian Calzones

Ingredients
  

  • 1 pound frozen white bread dough
  • 1 pound lean ground round beef
  • 1/2 cup chopped mushrooms
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 cup evaporated skim milk
  • 3 tablespoons fine dry bread crumbs
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon crushed fennel seed
  • 3 cloves minced garlic
  • 3/4 cup tomato sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • vegetable cooking spray

Instructions
 

  • Thaw out bread the dough
  • Combine the ground round and next 9 ingredients in a large skillet and stir well
  • Stir mixture over medium heat for 10 minutes or until meat is browned
  • Add sugar, 3/4 cup tomato sauce, and salt
  • stir occasional for the next 6 minutes
  • Remove from heat and let mixture cool slightly
  • Cut dough into 8 equal portions
  • Cover the dough and take out 1 portion at a time
  • roll portion to 1/8-inch thickness and repeat with the other 7 portions
  • Coat a large baking sheet with cooking spray, place each portion on it spreading them into 6-inch circles using your fingertips coated in flour
  • Using a spoon, place 1/3 cup of the meat mixture onto one half of each dough circle
  • Moisten the edges of the dough with water and fold the dough over the filling
  • Us a fork to seal the edges together
  • Using a pastry brush, lightly coat the Calzones with butter
  • Pre-heat over to 375F
  • Place baking sheet in over and bake for 20 minutes or until golden brown
  • Remove Calzones from oven
  • Use your pastry brush to again lightly coat the Calzones with butter
  • Serve immediately

Chicken Dijon

Chicken Dijon

Ingredients
  

  • 6 boneless-skinless chicken breasts
  • 1/3 cup yogurt
  • 1/4 cup Dijon mustard
  • 1/2 cup fine bread crumbs
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Preheat oven to 350°F
  • In bowl mix together yogurt and mustard.
  • Sprinkle chicken lightly with mustard mixture in a small bowl.
  • Spread mixture on both sides of chicken.
  • Place in baking pan.
  • Combine bread crumbs, thyme, salt and pepper and sprinkle over chicken.
  • Bake for 30 to 35 minutes until golden-brown and no longer pink in the center

Ingredients
  

  • 1 egg
  • 1/2 Cup milk
  • 3/4 Cup white bread crumbs soft
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lb. ground chuck
  • Aluminum foil

Instructions
 

  • Beat egg slightly in a large mixing bowl.
  • Carefully stir in the milk.
  • Add the breadcrumbs and mix.
  • Sprinkle in the salt and pepper.
  • Add the ground chuck and mix well with hands to completely combine.
  • Preheat oven to 350°F
  • Spray each cup of a muffin tin with a non stick cooking spray.
  • Fill each cup with the meat mixture.
  • Bake 30 minutes.
  • Remove pan from the oven and allow to cool 10 minutes.
  • Remove muffins from pan and cool completely on a wire rack.
  • Wrap each muffin tightly in aluminum foil.
  • Freeze for up to 2 months.
  • To reheat, remove muffins from freezer.
  • Preheat oven to 450°F
  • Place wrapped muffins on a cookie sheet.
  • Bake 30 minutes.
  • Unwrap and bake another 5 minutes.

Crispy Chicken from the Freezer

Always good to make things in advance and have dinner ready in the freezer so you can just thaw it out and pop it in the oven.  I always omit the Worcestershire Sauce, because I am allergic to fish and it has anchovies in it.

Ingredients
  

  • 2 1/2 lbs fryer chicken cut up
  • 3/4 C sour cream
  • 1 T lemon juice
  • 1 t Worcestershire sauce
  • 1 t celery salt
  • 1 t salt
  • 1/8 t pepper
  • 1/2 t paprika
  • 2 cloves garlic chopped fine
  • 1 C dry bread crumbs
  • Aluminum foil

Instructions
 

  • Combine sour cream and lemon juice in a small bowl.
  • Stir in Worcestershire sauce until completely blended.
  • Add the celery salt, salt, pepper, paprika and garlic and mix well.
  • Place bread crumbs in a shallow bowl or on a plate.
  • Preheat oven to 350 degrees.
  • Spray a large baking pan with a non stick cooking spray.
  • Dip chicken pieces into the sour cream mixture.
  • Roll in the bread crumbs.
  • Place in a single layer in the baking pan.
  • Bake 50 minutes or until chicken is tender and brown.
  • Let chicken cool before removing from pan.
  • Once the chicken has cooled wrap each piece in aluminum foil.
  • Freeze for up to 2 months.
  • Reheat by preheating oven to 450 degrees.
  • Place each piece of chicken still in the aluminum foil on a cookie sheet.
  • Bake 35 minutes.
  • Unwrap from aluminum foil and place back in the oven.
  • Continue baking 10 minutes or until crisp.

Summer Squash Medley

Ingredients
  

  • 8 small young summer squash zucchini, yellow, patty, etc
  • 1 pound seasoned pork sausage
  • 1 garlic clove
  • 1/2 large onion
  • 1/2 large green pepper
  • 4 large tomatoes
  • 1 teaspoon dried basil leaves
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups bread crumbs
  • 1/2 cup grated cheese

Instructions
 

  • Preheat oven to 350°F
  • Wash & Slice squash.
  • Grease a 13 x 9 baking pan.
  • In a large skillet, fry sausage until mostly cooked.
  • Drain sausage.
  • Add garlic, onion, green pepper, tomatoes, basil, salt and pepper and cover simmer for approximately 20 minutes.
  • Into the prepared baking dish, spread evenly 1/2 cup bread crumbs.
  • Layer 1/3 Tomato Mixture, 1/2 Mixed Squash, Bread Crumbs, Tomato Mixture, Remaining Squash, Remaining Tomato Mixture and Remaining Bread Crumbs.
  • Bake about 30 minutes, until squash is tender and pork done
  • Toward the last 15 minutes of cooking, sprinkle cheese over the top.
  • Bake until cheese has melted and slightly browned.
  • Remove from oven, and serve immediately.
