Gourmet Bacon Cheese Burgers

This is a quick and easy BBQ idea that you can throw together when company stops by unexpectedly.  It is easy to put together and always a favorite with my family for dinner.

Ingredients
  

  • 2 lbs Ground Beef - 80/20
  • 1 Cup Cheese your favorite variety
  • 1/2 Cup Cooked Bacon
  • Salt and Pepper to taste.

Instructions
 

  • Mix together ground beef, cheese and bacon.
  • Make into patties
  • Cook on the grill or in a pan.

Manicotti

Ingredients
  

  • Manicotti pasta shells
  • 1 medium onion chopped
  • 2 garlic cloves - minced
  • 1/4 Cup olive oil
  • 3 Cup cooked ham chopped
  • 1 Cup grated Parmesan cheese divided
  • 6 Tablespoons butter
  • 6 Tablespoons all purpose flour
  • 3 Cups milk
  • 2 Cups shredded Swiss cheese
  • Freezer wrap

Instructions
 

  • Place the olive oil in a large skillet over medium heat.
  • Add the onion and garlic.
  • Cook until tender about 5 minutes.
  • Remove from the heat.
  • Add the ham and allow to cool for about 15 minutes.
  • Stir in 1/2 C of the Parmesan cheese.
  • Cook the pasta according to the directions on the box.
  • Drain and allow to cool.
  • Place the butter in a large saucepan over medium high heat.
  • Cook until butter becomes foamy looking.
  • Carefully stir in the flour.
  • Cook 3 minutes until it begins to bubble.
  • Be sure to stir continuously so the flour doesn't burn.
  • Carefully pour in the milk.
  • Stir continuously until the sauce begins to thicken.
  • Stir in the Swiss cheese until smooth.
  • Place 1/4 of the cheese sauce into the ham mixture and stir.
  • Fill each shell with the ham mixture.
  • Place enough cheese sauce to cover the bottom of a large glass baking dish.
  • Place the shells in the cheese sauce.
  • Pour the rest of the cheese sauce over the top of the pasta shells.
  • Place in the refrigerator to cool.
  • Once cool wrap with the freezer wrap and freeze for up to 2 months.
  • When ready to cook thaw the dish overnight in the refrigerator.
  • Uncover and cover with the 1/2 grated Parmesan cheese.
  • Preheat oven to 350 degrees.
  • Bake casserole for 1 hour or until heated completely through.

Pizza Pie

This is one of my husbands favorite dinners.  I have put the recipe together in the regular form and if you go below the recipe you will find a step by step picture walk through.  I hope you enjoy this recipe as much as my family and I do.

Ingredients
  

  • Dough https://www.dailycookingrecipes.net/pizza-dough/
  • 1 Jar Pizza Sauce 1 jar will make 2 pizza pies
  • 2 Cups Mozzarella Cheese
  • Pepperoni Bacon, Italian Sausage, Peppers, Onions, etc. (Your Favorite Toppings)
  • Parmesan Cheese

Instructions
 

  • Make Pizza Dough Per Instructions on this post https://www.dailycookingrecipes.net/pizza-dough/ - Divide in 1/2
  • Roll out 1/2 of dough to fit 9 round inch cake pan.
  • Place dough on greased cake pan.
  • Add Toppings(see list above for ideas).
  • Add Cheese.
  • Roll out other 1/2 of dough and place on top of pizza pie.
  • Tuck edges in and place air cuts in top of pizza dough.
  • Add Pizza Sauce to top crust and smooth out.
  • Sprinkle with Parmesan Cheese
  • Preheat oven to 425°F.
  • Cook pizza for 20 to 30 minutes on center rack.
  • Cut in to 8 pieces & Serve.

I like to let the Pizza Dough rise for about 30 minutes.  It seems to make it easier to work with.

Roll out the dough and fit it to a 9 inch cake pan.  I use the cake pans because we live on a boat and don’t have a huge selection of pans to pick from.  These seem to make a nice size Pizza Pie though.

Now we need to cut the edges off the crust so we don’t have all that extra dough hanging off the sides.  This also makes it easier to work with the pan, because you don’t have that dough knocking in to things when you move the pan around.

Add your topping choices.  Family favorites around here are Bacon, Italian Sausage, Pepperoni, Sweet Peppers and sometimes a little onion.

Then we add the Mozzarella Cheese.  LOTS of Mozzarella Cheese.  We like lots of cheese on our Pizza Pies.

After you put the top crust on, make sure you put vent holes in it or the pizza will bubble and make a mess.

I like to sprinkle with a little Parmesan Cheese before we cook the Pizza Pie.  This adds a little extra cheese flavor.

Cook at 425°F for 20 to 30 minutes.  The times really depend on the size and type of oven you have.  Mine usually takes the full 30 minutes, but we only have a small counter top convection oven on our boat.

Fettuccine Alfredo

This is one of my family favorites.  They are always begging me to make it.  It is quick and easy to make and it is always a hit.  I usually server this with Italian Sausages and Garlic Bread.

Ingredients
  

  • 16 oz pkg of Fettuccine Pasta
  • 1/2 cup Butter
  • 2 cups Heavy Whipping Cream
  • 1 cup freshly grated Parmesan Cheese
  • 1 tsp. Sea Salt or Kosher Salt
  • 1/2 tsp. Freshly Ground Black Pepper

Instructions
 

  • Cook pasta according to package directions.
  • While pasta is cooking, melt butter in large skillet.
  • Add cream, salt and pepper.
  • Bring to a boil and simmer for a few minutes uncovered to reduce and thicken.
  • Remove from heat and add Parmesan Cheese.
  • Add Pasta & toss to mix. Serve immediately.
  • Sprinkle extra Parmesan Cheese over the top, if desired.

Ingredients
  

  • 1 3/4 to 2 1/4 Cups All-Purpose Flour
  • 1 Envelope Pizza Yeast
  • 1 1/2 teaspoons Sugar
  • 3/4 teaspoon Salt
  • 2/3 Cup Very Warm Water 120°to130°F
  • 3 tablespoons Oil
  • Pizza Sauce Cheese and Favorite Toppings

Instructions
 

  • Preheat Oven to 425°F
  • Combine Undissolved Yeast, Sugar, Salt in a large bowl.
  • Add Water and Oil.
  • Mix until well blended, about 1 minute.
  • Gradually add enough flour until dough soft ball is formed. Dough should still be slightly sticky.
  • Knead dough on floured surface and add additional flour if needed.
  • Roll dough out in to 12 inch circle.
  • Place on greased pizza pan.
  • Top with Pizza Sauce, Cheese and Favorite Toppings.
  • Bake for 12 to 15 Minutes, until cheese is bubbly and crust is lightly browned.

Mac & Cheese

My children like it best if I just serve it to them right after mixing the cheese in.  They say it tastes better.  Other people tell me they like it baked.

Ingredients
  

  • 2 Cups Elbow Macaroni
  • 1 1/2 Cups Velveeta Cheese I use the Sharp version
  • 1/3 Cup Milk
  • 1/4 teaspoon Salt

Instructions
 

  • In pot bring water to boil with salt to taste, and once the water is boiling add macaroni.
  • Cook for 12 to 15 minutes or until tender. Do not rinse.
  • In pot mix together milk and cheese.
  • Cook until cheese is mostly melted and add salt.
  • Add noodles to pot and mix well.
  • Put in casserole pan and bake for 10 to 15 minutes.

  • 1 large onion -- chopped
  • salt and pepper to taste
  • 1/2 cup green pepper
  • 1 1/2 cups grated cheese
  • 1/2 cup celery
  • 1 1/2 cups macaroni
  • 1 15 oz can tomatoes
  • 1 can peas -- no. 2 size
  • 1 large can chili without beans

Instructions
 

  • Bring water to boil and add macaroni and boil for 8 to 10 minutes.
  • Drain pasta.
  • Mix all ingredients together.

Ingredients
  

  • 1 1/2 cups green beans -- sliced in 2"pieces
  • 1 1/4 cups medium bow tie pasta -- about 3 ounces
  • 1 medium yellow summer squash -- cut 1 1/2cups
  • 1 cup sliced mushrooms
  • 1 medium onion -- chopped
  • 3/4 teaspoon dried basil -- crushed
  • 1 teaspoon dried oregano -- crushed
  • 1 tablespoon margarine or butter
  • 1 tablespoon all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1/4 cup shredded process swiss cheese
  • 3 teaspoons dijon mustard
  • 3 plum tomatoes -- diagonally sliced about 1 cup
  • 1/2 cup soft bread crumbs
  • 2 tablespoons grated Parmesan cheese

Instructions
 

  • In a saucepan cook green beans, covered, in salted boiling water for approximately 5 minutes.
  • Add pasta.
  • Return to boiling and boil cook 5 minutes more or till vegetables and pasta are tender.
  • Drain.
  • Set aside.
  • Cook mushrooms, onion, basil, and oregano in hot butter till tender.
  • Stir in flour, salt, and pepper.
  • Add milk.
  • Cook and stir till bubbly
  • Stir in Swiss cheese, and mustard.
  • Cook for about 1 minute more.
  • Gently toss cheese sauce with pasta vegetable mixture.
  • Add tomatoes; toss gently.
  • Sprinkle with bread crumbs and Parmesan cheese
  • Bake in a 400°F oven 20-25 minutes or till hot

Tiramisu

Ingredients
  

  • 1 sponge cake -- 10 to 12"
  • 3 ounces coffee -- brewed strong
  • 3 ounces instant espresso powder
  • 3 ounces brandy or rum
  • 1 1/2 pounds cream cheese or mascarpone -- room temp
  • 1 1/2 cups powdered sugar
  • unsweetened cocoa powder

Instructions
 

  • Cut sponge cake across middle forming two layers, each about 1 1/2 inches high
  • Blend coffee and brandy.
  • Sprinkle enough of mixture over bottom half of cake to flavor it strongly
  • Don't moisten cake too much or it may collapse on serving.
  • Beat room-temperature cheese and 1 cup sugar until sugar is completely dissolved and cheese is light and spreadable.
  • Test sweetness during beating, adding more sugar if needed.
  • Spread cut surface of bottom layer with half of the cheese mixture.
  • Replace second layer and top this with remaining cheese mixture.
  • Sprinkle top liberally with sifted cocoa.
  • Refrigerate cake for at least 2 hours before cutting and serving.

Ingredients
  

  • 4 medium vidalia onions
  • 1/2 cup hot water
  • 2 teaspoons tomato juice
  • 1 1/2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground pepper

Instructions
 

  • Preheat oven to 350F
  • Peel onions and cut in half crosswise
  • Place onion halves, cut side up, in a casserole dish in single layer.
  • Mix ingredients; stir well
  • Bake at 350 for 60 minutes, covered
  • Add additional water if onions seem to dry.

Chicken Pizza

Ingredients
  

  • 4 ounces boneless/skinless chicken breast
  • 2 tablespoons onions -- dice
  • 1 cup tomatoes; drain -- dice
  • 1 teaspoon garlic -- chop
  • 1/8 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1 cup mozzarella cheese -- shredded
  • 1/2 cup peppers red, orange or yellow -- slice
  • 1 tablespoon Parmesan cheese -- shred
  • 1 12 " pre-baked pizza crust

Instructions
 

  • Spread the tomato mixture over the top of the crust.
  • Cut chicken strips over spread evenly over the tomatoes.
  • Top with cheeses mozzarella cheese.
  • Add the sliced peppers and sprinkle with Parmesan cheese
  • Bake at 450F for 8 to 10 minutes, or until cheese is melted (bubbly)
