Whole Wheat Mac ‘N Real Cheese

Whole Wheat Mac 'N Real Cheese

Ingredients
  

  • 8 oz whole wheat elbow macaroni
  • 2 cups frozen vegetables
  • 1 3/4 cups milk divided
  • 3 Tbsp whole wheat flour
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 3/4 cup shredded Cheddar cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 tsp Dijon mustard

Instructions
 

  • Cook macaroni according to package direction.
  • When macaroni is half way cooked add frozen vegetables and continue cooking until macaroni is tender.
  • Drain through a colander and keep warm.
  • In sauce pan, add 1 1/2 cups of the milk to the pot and bring to a simmer.
  • Whisk together remaining milk, flour, salt and pepper.
  • Slowly add flour mixture to simmering milk, simmer until thickened.
  • Add both cheeses and mustard, stir constantly until cheese is melted completely.
  • Add Macaroni and Vegetables, stirring until well coated.

Quick Tips to Save Money at The Grocery Store

Everything is getting more expensive today. From gas to groceries, our hard-earned dollars are challenged to stretch further. Now, we may be able to ride a bicycle around town if we can’t put gas in our cars. But, we have to eat. There’s no getting around that. So, we have to find ways to spend less on groceries while still getting the things that we need to feed ourselves and our families. Here are six money saving tips to try the next time you go grocery shopping.

  1. Clip coupons. They put those in the newspaper for a reason. If there are new items you want to try, use a coupon to get it at a discount. If you like it, you have saved some money. On the other hand, if you don’t take a liking to it, you didn’t pay full price. For me, coupons save an average of ten or more dollars per visit. That’s money in my pocket that I can put towards gas for the car.  I use coupons.com.  I have found that for what I am buying, they have a lot of coupons for products I use all the time. We have an infant and they always have coupons for diapers 🙂 
  2. Buy more staples than prepared foods. It is easier to buy a box of macaroni and cheese, but is it more economical? A large box of macaroni and a block of cheese will make more servings for your family than one box of prepared macaroni and cheese. The next time you go shopping and pick up a box or bag of an already prepared item, ask yourself if you can make that at home for less.   3. Buy in bulk. Consider the food items that you use most often. Cereals, meats, vegetables, condiments, juices, and paper products can be bought in bulk usually at a lower price at food warehouses like Costco, BJ’s, and Sams Club. If you have a coupon, you’ll save even more money. 
  4. Don’t shop when you are hungry. This is a definite no-no. Shopping on an empty stomach means that you will pick up more things than you need. You are more likely to pick up that bag of chocolate chip cookies or that box of donuts when the growling gets underway. 
  5. Take a grocery list with you. This is another protection against picking up things that are too costly. Check your cabinets and the fridge to see what you need and write them down. Remember, the goal is to stick to the list as much as possible. 
  6. Shop at the same stores. This is more of a frustration reliever. In a new store, you spend most of your time looking for things and walking up and down every aisle, which oftentimes leads to forgetting an item or two. Going to the same store each time makes you more familiar with the prices so you can estimate your bill as you write your grocery list.

 

Rising prices don’t have to mean a lean dinner table. There are ways to make your food dollar go further and if you take the time to implement the ideas listed above as well as others of your own, you’ll see savings each and every time you shop.

Mac & Cheese

My children like it best if I just serve it to them right after mixing the cheese in.  They say it tastes better.  Other people tell me they like it baked.

Ingredients
  

  • 2 Cups Elbow Macaroni
  • 1 1/2 Cups Velveeta Cheese I use the Sharp version
  • 1/3 Cup Milk
  • 1/4 teaspoon Salt

Instructions
 

  • In pot bring water to boil with salt to taste, and once the water is boiling add macaroni.
  • Cook for 12 to 15 minutes or until tender. Do not rinse.
  • In pot mix together milk and cheese.
  • Cook until cheese is mostly melted and add salt.
  • Add noodles to pot and mix well.
  • Put in casserole pan and bake for 10 to 15 minutes.

  • 1 large onion -- chopped
  • salt and pepper to taste
  • 1/2 cup green pepper
  • 1 1/2 cups grated cheese
  • 1/2 cup celery
  • 1 1/2 cups macaroni
  • 1 15 oz can tomatoes
  • 1 can peas -- no. 2 size
  • 1 large can chili without beans

Instructions
 

  • Bring water to boil and add macaroni and boil for 8 to 10 minutes.
  • Drain pasta.
  • Mix all ingredients together.

Ingredients
  

  • 1 cup uncooked tri-color spiral macaroni
  • 2 cups bite-size pieces salad greens
  • 1/2 cup tomatoes
  • 1/2 cup pepperoni
  • 1/3 cup sliced zucchini
  • 3 tablespoons sliced green onions with tops
  • 2 tablespoons sliced ripe olives
  • 1/2 cup sharp cheddar cheese cut in to small cubes
  • 1/4 to 1/2 Cup Italian Dressing use to your liking

Instructions
 

  • Cook macaroni as directed on package
  • Rinse with cold water until cool; drain
  • Toss with remaining ingredients
  • Serve with freshly cracked black pepper if desired

Macaroni & Chicken Casserole

 

Macaroni & Chicken Casserole

Ingredients
  

  • 3 pound chicken
  • 2 cups uncooked macaroni
  • 2 1/2 cups milk
  • 2 cans cream of mushroom soup
  • 8 oz. cream cheese
  • 1 can french fried onion rings

Instructions
 

  • Cook and bone chicken
  • Place chicken in bottom of 13 x 9 inch pan
  • Pour uncooked macaroni over chicken
  • Pour milk over macaroni
  • Spread soup over mixture
  • Cut cream cheese into small pieces and lay over soup
  • Cover and place in refrigerator overnight or at least 8 to 10 hours
  • One hour before baking, take out of refrigerator and let set
  • Heat oven to 350 degrees and bake for 50 minutes uncovered
  • Cover with onion rings and bake for 5 to 10 minutes more
