Sausage Gravy

Sausage Gravy

Ingredients
  

  • 1 lb. pork sausage
  • 2/3 cup flour
  • 3 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Cook sausage and remove from pan.
  • Add 2/3 cup flour to drippings in pan. Cook and stir over medium heat for 5 to 10 minutes or mixture starts to turn golden brown.
  • Slowly add milk stirring constantly.
  • Add salt and pepper.
  • Cook gravy until it boils and thickens.
  • Add sausage to gravy mixture.
  • Server over warm biscuits.

Afghan Chicken

This dish tenderizes, moistens, and extracts flavor from a long slow marinate in a garlic yogurt, so you wind up with a skinless grilled chicken that is as yummy as it is good for you.

We suggest you serve this with an Arab flat-bread or soft pita and fresh yogurt.

Afghan Chicken

Ingredients
  

  • 2 large clov garlic
  • 1/2 teaspoon salt
  • 2 cups plain whole-milk yogurt
  • 4 tablespoons juice and pulp of 1 large lemon
  • 1/2 teaspoon cracked black pepper
  • 2 large whol chicken breasts -- about 2 pounds

Instructions
 

  • Mix garlic and salt into a paste.
  • Stir in the yogurt, lemon and pepper.
  • Skin the chicken breasts. Remove all extra fat and split into halves.
  • Make the halves lay flat by bending backwards to separate the bones.
  • Coat each half with the yogurt mixture.
  • Cover the bowl tightly and place in refrigerator to marinate for at least 12 hours, no longer then 36 hours.
  • Turn the pieces over about half-way through marinating.
  • When you are ready to cook, remove the breasts from the marinade and wipe off most of the yogurt. Leave a thin film on each piece.
  • Grill about 6 inches above the heat for about 6 to 8 minutes a side. ( or until completely cooked. )
  • Serve while still hot.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sour cream
  • 1 egg -- lightly beaten
  • 1 cup ham -- cube
  • 1/2 cup softened butter

Instructions
 

  • Mix together sour cream and egg and whisk together.
  • Add in flour, baking powder and salt; mix well.
  • Knead on lightly floured surface for 30 seconds.
  • Roll to 1/2 inch thickness and cut with biscuit cutter.
  • Place on a greased baking sheet.
  • Bake at 425°F~ for 11 minutes or until lightly browned
  • In blender combine butter and ham and blend until ham is minced and it is all mixed well.
  • Spread over warm biscuits

Marinated Chicken Thighs

Marinated Jerk Chicken Thighs

Ingredients
  

  • 1/4 cup dry red wine
  • 1 medium jalapeno -- seeded and minced
  • 2 tablespoons green onion -- minced
  • 2 teaspoons vegetable oil
  • 1 teaspoon ground allspice
  • 1 1/2 teaspoons ground coriander
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 8 skinless chicken thighs
  • 1/4 teaspoon salt
  • 1/8 freshly ground black pepper

Instructions
 

  • Combine wine, jalapeno, green onion, oil, allspice, coriander, cayenne, cinnamon and nutmeg.
  • Place chicken in a bowl and add the marinade and marinate overnight in refrigerator.
  • Place chicken in baking pan.
  • Sprinkle with salt and pepper.
  • Preheat oven to 375 degrees.
  • Bake 45 minutes, or until chicken is completely cooked.

Ingredients
  

  • 1 1/2 cups vegetable oil
  • 1 1/2 cups sugar
  • 1/2 cup packed brown sugar
  • 3 eggs
  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 1/2 cups apples -- diced peeled
  • 1 cup walnuts -- chopped
  • 2 teaspoons vanilla
  • **CARAMEL ICING**
  • 1/2 cup packed brown sugar
  • 1/3 cup light cream
  • 1/4 cup butter
  • 1 dash salt
  • 1 cup confectioner's sugar

Instructions
 

  • In mixing bowl, combine oil and sugar
  • Add eggs and all dry ingredients and stir well.
  • Fold in apples, walnuts and vanilla
  • Pour into a greased and floured 10 inch tube pan.
  • Bake at 325° for 1 - 1/2 hours.
  • Cool in pan 10 minutes.
  • Place on wire rack to cool completely.
  • In the top a double boiler over simmering water, heat brown sugar, cream, butter and salt until sugar is dissolved
  • Cool to room temperature
  • Beat in confectioners sugar until smooth; drizzle over cake.

Ingredients
  

  • 1 lb ground beef
  • 2 large garlic cloves -- minced
  • or pressed.
  • 1 large onion -- chopped
  • 1 green pepper -- chopped
  • 1 green hot pepper -- chopped
  • 1 zucchini -- diced
  • 1 large can pureed tomatoes
  • 6 ounces tomato paste
  • 3 tablespoons chili powder to your liking
  • 1/2 teaspoon cloves
  • 1 teaspoon white vinegar
  • 1/2 cup uncooked radiatore pasta
  • 1 can chili beans - 15 oz.

Instructions
 

  • Brown Ground Beef.
  • Saute all veggies in olive oil until the onions are tender.
  • Add everything together and bring to boil.
  • Reduce heat to simmer and add chili beans.
  • Simmer for about an hour, or until all ingredients have blended and pasta is cooked.

Ingredients
  

  • 4 medium vidalia onions
  • 1/2 cup hot water
  • 2 teaspoons tomato juice
  • 1 1/2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground pepper

Instructions
 

  • Preheat oven to 350F
  • Peel onions and cut in half crosswise
  • Place onion halves, cut side up, in a casserole dish in single layer.
  • Mix ingredients; stir well
  • Bake at 350 for 60 minutes, covered
  • Add additional water if onions seem to dry.

Honey Baked Red Onions

Ingredients
  

  • 3 large red onions
  • 1/4 cup water
  • 3 tablespoons butter
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Instructions
 

  • Cut onions in half crosswise
  • Place onions in shallow casserole pan cut side down in single layer.
  • Sprinkle with water and cover.
  • Bake at 350F for 20 to 25 minutes
  • Turn onions over.
  • Combine remaining ingredients
  • Spoon half of mixture over onions
  • Return to oven and bake, uncovered, 15 minutes
  • Add remaining honey mixture and bake for an additional 15 minutes or until tender.

Mustard-Barbecued Chicken

Mustard-Barbecued Chicken Legs

Ingredients
  

  • 2 tablespoons Dijon mustard
  • 1 tablespoon dry white wine
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon thyme
  • 1 clove garlic minced
  • 4 chicken legs and thighs

Instructions
 

  • In small bowl combined all ingredients except chicken.
  • Place chicken legs, thighs and sauce in a bag and shake well.
  • Cover chicken and refrigerate about 4 hours.
  • Bake or Grill chicken legs until well browned on both sides, about 45 minutes.

Ingredients
  

  • 1 yellow squash
  • 1 zucchini
  • 2 carrots
  • 1 red onion
  • 2 tablespoons fresh chopped dill or 2/3 teaspoon dry dill
  • 1/3 cup cider vinegar
  • 1/4 cup light brown sugar
  • 1 teaspoon whole mustard seed
  • 1 teaspoon whole coriander seed
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed red pepper

Instructions
 

  • Dice yellow squash, zucchini, carrots, red onion.
  • Combine yellow squash, zucchini, carrots, red onion and dill and mix well together.
  • Over low heat, combine vinegar, sugar, mustard seed, coriander seed, salt and red pepper in small sauce pan.
  • Cook until sugar dissolves, approximately 3 minutes
  • Pour over vegetable mixture, and toss until all pieces are well coated.
