Unforgetable Brownies

- 2/3 Cups Butter
- 5 oz. Unsweetened Chocolate cut into pieces
- 1 3/4 Cups Sugar
- 2 tsp. Vanilla
- 3 Eggs
- 1 Cup Flour
- 1/2 Cup Chopped Walnuts optional
Preheat oven to 350°F.
Grease 9x9 Pan.
Heat butter and chocolate over medium heat until melted, stirring constantly. Cool.
Mix together all other ingredients.
Mix in chocolate mixture.
Pour into pan.
Bake for 40 to 45 minutes

Pasta Salad

- 2 - 16 oz tri-color rotini
- 1 can black olives - sliced
- 1 large tomato - diced
- 1/2 - 16 oz. bottle of Italian dressing
- 1 - Sweet Bell Pepper Yellow, Orange or Red
- **OPTIONALl**
- 1/2 package Pepperoni - sliced in to 1/4's
- 1/4 lb Sharp Cheese - cubed
Cook Pasta according to package instructions.
Cool Pasta and add olives, tomatoes, peppers and Italian dressing.
Serve Chilled.
Add **OPTIONAL** ingredients in with pasta.

Scrabbled Eggs

- 2 Eggs
- 1/8 cup milk
- 1/8 cup red onion
- 1/8 cup Sweet Bell Pepper
- Dash Salt & Pepper
- 1 tablespoon butter
Saute Onions and Peppers together in olive oil with a little salt and pepper until tender.
Whisk together Eggs, milk, salt and pepper.
Melt butter in pan.
Add egg mixture to pan with onions and peppers.
Use fork and keep stirring eggs until done.

Southern Omelette and Cheese Sauce

- **CHEESE SAUCE**
- 1 tablespoon butter
- 1 tablespoon starch
- 1 cup milk
- 1/8 teaspoon salt
- 1/8 teaspoon white pepper
- 1/4 cup cheese -- shredded
- **OMELETTE**
- 3 Eggs
- 1/8 cup red onion
- 1/8 cup Sweet Pepper red, yellow or orange, because they are sweeter
- 1/8 cup milk
- Salt
- Pepper
- 1 tablespoon butter
Heat butter in a small skillet.
Add in starch.
Slowly add milk.
Cook stirring until sauce thickens.
Stir in salt and pepper
Add 1/4 cup cheese.
Still until all cheese is melted.
**OMELETTE**
Saute Peppers and Onions in olive oil until tender.
Whisk eggs, milk, salt and pepper.
Melt butter in pan.
Pour egg mixture in to hot pan.
Cook until eggs are done on 1 side and flip over.
Sprinkle onions and peppers on to 1 side of the omelette and then fold in half when cooked on other side.
Plate and cover with cheese sauce.

White Cheese Sauce

- 1 tablespoon butter
- 1 tablespoon starch
- 1 cup milk
- 1/8 teaspoon salt
- 1/8 teaspoon white pepper
- **CHEESE SAUCE**
- 1/4 cup cheese -- shredded

Chicken, Rice & Broccoli Meal

- 6 skinless boneless chicken breast cut in to 2" pieces
- 1/2 to 3/4 teaspoon Lemon Pepper Seasoning
- 1 10.75 ounce can Condensed Cream of Chicken Soup
- 4 1/2 cups water
- 1/4 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 2 cups uncooked instant brown rice
- 2 cups fresh broccoli
Preheat oven to 375°F
Grease 13x9 pan.
Cut Chicken and put in pan. Sprinkle Lemon Pepper seasoning over chicken and bake for 30 minutes.
Stir the soup, water, paprika, rice and black pepper in the sauce pan and heat to a boil. Cook for 10 to 15 minutes or until rice is tender.
Steam Broccoli for 5 minutes in boil water.

Stuffed Pork Tenderloin

- 4 pounds Pork Tenderloin
- 1/2 teaspoon Basil
- 1 Package Pork Stuffing Mix
- 1/2 Pepper Yellow, Red or Orange
- 1 Small Onion
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- Cooking Twine
Chop onion & pepper in to small pieces.
In small pan saute onions & peppers with salt and pepper
While that is cooking, take Pork Tenderloin and cut lengthwise down the center leaving approximately 1/2 inch at the bottom so it is still attached.
Mix together salt, pepper & basil and coat the outside of the tenderloin.
Make stuffing according to package instructions with sauted onions and peppers in it.
Stuff tenderloin and tie with Baking Twine.
Preheat oven to 400°F.
Bake tenderloin for 60 minutes.
Check to make sure meat is cooked properly.

Tomato Bruschetta W/ Fresh Basil
- 2 large tomatoes -- diced
- 1/4 cup chopped fresh basil -- lightly packed
- 1 garlic clove -- minced
- 1 half loaf French or italian bread or 1 French baguette
- 1 large garlic clove -- halved
- 1 tablespoon olive oil
- 2 tablespoons freshly grated parmesan -- optional
In bowl, combine tomatoes, basil, minced garlic, and salt and pepper to taste; let stand for 15 minutes or cover and refrigerate for up to 4 hours
Slice bread in 1"-thick slices
Place on baking sheet and broil until lightly browned on each side
Rub cut side of garlic clove over one side of bread; brush with olive oil
Spoon tomato mixture over top
Sprinkle with Parmesan (if using)
If tomato mixture has been refrigerated, broil brushchetta for 1 minute
Makes about 16 slices
