Green N Red Big Beefy Rice Dinner

- 2 lbs ground beef
- 1 softball size onion diced small
- 2 garlic cloves grated
- 1 - 16 oz jar green salsa salsa verde
- 1 - 16 oz jar red salsa
- 2 cups tomato juice
- 8 cups cooked rice
- 1 pint sour cream
- salt and pepper to taste
- 1 cup shredded Cheddar cheese
Cook ground beef in a large skillet over medium-high heat and cook, until slightly brown.
Add onions and continue cooking until onions are tender.
Add garlic and cook for another 1 minute.
Add in green, red salsas and tomato juice and cook for 5 minutes.
Preheat oven to 350°F.
Add rice to a large casserole dish.
Add meat mixture to casserole dish.
Add sour cream and stir to combine.
Season with salt and pepper if desired.
Top with Cheddar cheese.
Bake casserole, uncovered, for 30 to 40 minutes or until cheese is melted.

Spiced Pork Baked In Corn Husk Blankets

- 1 Tbsp chile powder
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tsp brown sugar
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1.5 to 2 lbs pork tenderloin cut into 6 pieces
- 6 clean dried corn husks soaked for 1 hour in warm water, then patted to remove excess water, but not dry
- butchers twine
Preheat oven to 375° F. Lightly oil a baking sheet. Lay the prepared corn husks out onto a work surface.
In pie pan, mix together the chile powder, cumin, coriander, sugar, salt, and cayenne pepper.
Press each piece of pork tenderloin into the spice mixture and gently set in a corn husk.
Wrap the corn husk around the pork and tie securely with a couple pieces of butchers twine. Place each bundle onto a baking sheet.
Bake for 25 to 30 minutes or until meat thermometer reads 145°F.
Remove from oven and let rest for 5 minutes.
Remove from husks and twine and serve.

Brown Rice Spanish Skillet

- 1 Tbsp cooking oil
- 2 cups uncooked brown rice
- 1 large sweet onion diced fine
- 1 medium green bell pepper diced fine
- 4 cups vegetable broth or chicken broth
- 1 - 15 oz can diced tomatoes-green chili blend
- 1/2 tsp kosher salt
- 3 Tbsp chipotle pepper
Add oil in large skillet over medium heat; add the brown rice, onion, and bell pepper and saute, stirring, until the vegetables soften.
Add the remaining ingredients, stir, reduce heat to low, cover the skillet loosely, and simmer for 25 to 30 minutes or until the rice is tender.
Serve hot or room temperature as a side dish with grilled meat of your choice.

Lasagna

- 1 lb. sweet Italian sausage
- 1 lb. lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic crushed
- 1 - 28 oz can crushed tomatoes
- 2 - 6 oz cans tomato paste
- 2 - 6.5 oz. cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil leaves
- 1 teaspoon Italian seasoning
- 1 tablespoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles
- 16 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 3/4 pound mozzarella cheese shredded
- 3/4 cup grated Parmesan cheese
In large stock pot, cook sausage, beef, onion, and garlic over medium heat.
Stir in crushed tomatoes, tomato paste, tomato sauce, and water.
Season with sugar, basil, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley.
Simmer, covered, for about 1 1/2 hours, stirring occasionally.
Bring a large pot of lightly salted water to a boil.
Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. (If you prefer you can use the no cook noodles).
In a bowl combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
Preheat oven to 375° F
Spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish.
Arrange 6 noodles lengthwise over meat sauce.
Spread with one half of the ricotta cheese mixture.
Top with a third of mozzarella cheese.
Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese.
Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes.
Cool for 15 minutes before serving.

Classic Shrimp Ceviche

- 1/2 lb tiny cooked shrimp coarse chopped if you wish
- 1 cup finely diced cucumber
- 1/2 cup finely diced ripe avocado
- 1/2 cup finely diced Roma tomatoes
- 1/4 cup finely diced red onion
- 1/4 cup fresh squeezed lime juice
- 2 Tbsp Franks Red Hot sweet chili sauce or similar
- 1 jalapeno chili seeded and minced
Stir together all the ingredients in glass bowl, making sure the shrimp is well coated. Cover with plastic wrap and let sit for 20 minutes for flavors to blend.
Serve room temperature or chilled.
Serve over greens.

Sizzling Mixed Pepper Fajitas

- 1 lb. chicken breast - boned and skinned
- 1 large red onion
- 1 large carrot
- 1 sweet red bell pepper
- 1 sweet green bell pepper
- 1 sweet yellow bell pepper
- high heat cooking oil
- 2 cloves garlic minced
- 1 - 15 oz cab black beans rinsed and drained well
- 1/2 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp smoked paprika
- 8 - tortillas
Cut chicken into small thin strips.
In large skillet; drizzle cooking oil in to lightly coat bottom.
Cook chicken in skillet until lightly browned, set aside.

Cut the onion, carrot, and all the peppers up into thin strips.
Put skillet over medium-high heat and add all the vegetables, cooking and stirring until just softened.
Stir in the chicken, garlic, beans, seasonings, and meat if you are adding, stirring and cooking for 1 minute, just until hot.
Remove skillet from heat.
Serve in tortillas

Bacon Bean And Rice Pot

- 6 slices bacon diced
- 1 large onion diced
- 1 garlic clove minced
- 1 cup beef broth
- 1 1/2 cups water
- 1 cup uncooked rice
- 1 tsp dried thyme
- 2 cups cooked or canned pinto or kidney beans
In skillet over medium heat, add bacon pieces and cook until browned and crispy.
Drain excess fat off on paper towels and set aside
Add in bacon grease the onion, stir and cook until softened slightly, then add garlic and cook 30 seconds longer, stirring constantly.
Add beef broth and water to skillet, stir, then add the rice and thyme.
Cover skillet, turn heat to low, and simmer until rice is tender, about 20 to 25 minutes depending on rice.
Add the beans, stirring to combine, and heat until mixture is hot; remove from heat, cover skillet again and let stand for 5 more minutes.
Remove from heat and add bacon pieces.
Server and Enjoy !

Mozzarella Meatballs

- 1 lb. lean ground beef
- 1 lb. mild Italian sausage
- 1 cup breadcrumbs
- 1 Tablespoon Italian seasoning
- 3 eggs
- 3 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 lb. mozzarella cheese cut into cubes
- Olive Oil
- Marinara
In bowl mix beef, sausage, eggs, garlic, salt and pepper.
Make approximately 2" balls.
Press mozzarella cubes in to middle of balls.
Drizzle skillet with olive oil and cook until brown.

Put marinara sauce in sauce pan and simmer for 25 to 30 minutes or you can bake at 350F for 30 minutes.

Serve with spaghetti of your choice.

Lamb Kabobs

- 2 pounds boneless lamb
- 1 cup yogurt
- 1/4 cup lemon juice
- salt to taste
- **FOR PASTE**
- 1 cup coriander leaves
- 1 cup mint leaves
- 3 green chiles
- 1 " ginger piece
- 10 garlic flakes
- 12 grams raw papaya
Combine all ingredients for paste and mix well.
Add Lamb, yogurt, lemon juice and salt and mix well, making sure the lamb is well coated.
Marinate for 5 hours
Skewer these pieces through a kabob rod and grill over fire, until they are evenly reddish brown.
Serve with onion pieces and lemon wedges.

Tomato Avocado Salsa

- 6 Roma tomatoes finely diced
- 1 small sweet onion finely diced
- 1 garlic clove grated
- 1 jalapeno seeded and chopped
- 2 Tbsp finely chopped cilantro
- 1 lime zested and juiced
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 ripe avocado finely diced
Combine all ingredients in a large glass bowl, except salt.
Add salt and stir again.
Cover the bowl with plastic wrap and let rest for 15 minutes at room temperature.
Serve with tortilla chips.

Six Minute Almond Green Bean Rice Skillet

- 1 tsp butter
- 1/2 cup slivered almonds
- 1/2 cup finely diced red bell peppers
- 3 cups cooked brown rice
- 1 package 10 oz frozen French-cut green beans, thawed and drained
- 2 green onions cut into thin strips
- salt and pepper to taste
In large heavy skillet, place over medium heat, add butter and slivered almonds, and cook until almonds are light golden in color; about 1 minute.
Add the red bell peppers to skillet and continue cooking and stirring until peppers soften slightly; about 2 minutes.
Add rice and green beans and continue cooking and stirring until all ingredients are hot; about 3 minutes.
Add the green onions, stir, taste and season as desired.
Serve immediately.
