Italian Breakfast Casseroles

Ingredients
  

  • 4 medium red potatoes -- sliced
  • 2 tablespoons cooking oil
  • 8 eggs -- lightly beaten
  • 1 tablespoon butter or margarine
  • 1/2 pound thinly sliced fully cooked ham -- diced
  • 2 cups prepared spaghetti sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • In a skillet, fry potatoes in oil until tender, about 10-15 minutes.
  • Place in the bottom of four individual 16-oz baking dishes.
  • In skillet, scramble eggs in butter until done.
  • Spoon over potatoes.
  • Top with ham.
  • Pour 1/2 cup spaghetti sauce into each casserole; sprinkle with cheese
  • Preheat oven to 350°F.
  • Bake for 20 minutes or until hot and bubbly.

Chocolate Mint Pie

Ingredients
  

  • 1 cup Semi-Sweet Chocolate Mini Morsels
  • 1 - 12 oz can Evaporated Milk
  • 1 tablespoon butter
  • 1 9- inch chocolate crumb crust
  • 1 - 3.4 oz package vanilla instant pudding
  • 1/3 cup water
  • 1 teaspoon peppermint extract
  • 4 drops green food coloring
  • 1 - 8 oz frozen whipped topping thawed
  • Additional Semi-Sweet Chocolate Mini Morsels garish

Instructions
 

  • Melt 1 cup morsels and 1/3 cup evaporated milk in double boiler over medium heat.
  • Stir in butter; then pour into crust.
  • Refrigerate for 20 minutes,
  • Mix remaining evaporated milk, pudding mix, water, peppermint extract and food coloring.
  • Stir in 2 cups whipped topping.
  • Spoon over chocolate layer.
  • Refrigerate for 2 hours.
  • Sprinkle with additional Semi-Sweet Chocolate Mini Morsels as garish.

Cantaloupe Orange Slushie

Ingredients
  

  • 1 medium size ripe cantaloupe
  • 2 1/2 cups real orange juice
  • 4 ice cubes
  • sugar or honey to taste

Instructions
 

  • Clean and dice the cantaloupe, and put in blender with orange juice and ice cubes.
  • Blend until smooth and frothy. Taste and add sugar if desired.
  • Pour into glasses and serve immediately.

Ingredients
  

  • 1 medium cantaloupe cleaned, diced
  • 1 cucumber peeled, seeds removed, and diced
  • 1/2 cup plain Greek yogurt
  • 1/2 tsp fresh grated ginger
  • 2 Tbsp fresh basil
  • 2 tsp fresh mint
  • 2 tsp olive oil
  • 1/4 tsp white wine vinegar
  • dash cayenne

Instructions
 

  • Put all ingredients in food processor and pulse until smooth.
  • Place in bowl and refrigerate for approximately 1 hour for flavor blending.
  • Remove from refrigerator and stir. Server cold. Place a dollop of yogurt and mint on a garnish.

Ingredients
  

  • 2 Cups Flour
  • 2 Cups Sugar
  • 1/2 Cup Shortening or Butter
  • 3/4 Cups Water
  • 3/4 Cups Milk
  • 1 tsp. Baking Soda
  • 1 tsp. Salt
  • 1 tsp. Vanilla
  • 1/2 tsp. Baking Powder
  • 2 Eggs
  • 4 oz. unsweetened Chocolate melted and cooled

Instructions
 

  • Preheat oven to 350°F.
  • Grease 13x9 pan.
  • Mix together all ingredients until there are no lumps. In a mixer it will take approximately 3 minutes on medium speed.
  • Put in pan.
  • Bake for 40 to 45 minutes.

Italian Calzones

Ingredients
  

  • 1 pound frozen white bread dough
  • 1 pound lean ground round beef
  • 1/2 cup chopped mushrooms
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 cup evaporated skim milk
  • 3 tablespoons fine dry bread crumbs
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon crushed fennel seed
  • 3 cloves minced garlic
  • 3/4 cup tomato sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • vegetable cooking spray

Instructions
 

  • Thaw out bread the dough
  • Combine the ground round and next 9 ingredients in a large skillet and stir well
  • Stir mixture over medium heat for 10 minutes or until meat is browned
  • Add sugar, 3/4 cup tomato sauce, and salt
  • stir occasional for the next 6 minutes
  • Remove from heat and let mixture cool slightly
  • Cut dough into 8 equal portions
  • Cover the dough and take out 1 portion at a time
  • roll portion to 1/8-inch thickness and repeat with the other 7 portions
  • Coat a large baking sheet with cooking spray, place each portion on it spreading them into 6-inch circles using your fingertips coated in flour
  • Using a spoon, place 1/3 cup of the meat mixture onto one half of each dough circle
  • Moisten the edges of the dough with water and fold the dough over the filling
  • Us a fork to seal the edges together
  • Using a pastry brush, lightly coat the Calzones with butter
  • Pre-heat over to 375F
  • Place baking sheet in over and bake for 20 minutes or until golden brown
  • Remove Calzones from oven
  • Use your pastry brush to again lightly coat the Calzones with butter
  • Serve immediately

  • 1 Jar Pizza Sauce 1 jar will make 2 pizza pies
  • 2 Cups Mozzarella Cheese
  • Pepperoni Bacon, Italian Sausage, Peppers, Onions, etc. (Your Favorite Toppings)
  • Parmesan Cheese

Instructions
 

  • Make Pizza Dough Per Instructions on this post https://www.dailycookingrecipes.net/pizza-dough/ - Divide in 1/2
  • Roll out 1/2 of dough to fit 9 round inch cake pan.
  • Place dough on greased cake pan.
  • Add Toppings(see list above for ideas).
  • Add Cheese.
  • Roll out other 1/2 of dough and place on top of pizza pie.
  • Tuck edges in and place air cuts in top of pizza dough.
  • Add Pizza Sauce to top crust and smooth out.
  • Sprinkle with Parmesan Cheese
  • Preheat oven to 425°F.
  • Cook pizza for 20 to 30 minutes on center rack.
  • Cut in to 8 pieces & Serve.

I like to let the Pizza Dough rise for about 30 minutes.  It seems to make it easier to work with.

Roll out the dough and fit it to a 9 inch cake pan.  I use the cake pans because we live on a boat and don’t have a huge selection of pans to pick from.  These seem to make a nice size Pizza Pie though.

Now we need to cut the edges off the crust so we don’t have all that extra dough hanging off the sides.  This also makes it easier to work with the pan, because you don’t have that dough knocking in to things when you move the pan around.

Add your topping choices.  Family favorites around here are Bacon, Italian Sausage, Pepperoni, Sweet Peppers and sometimes a little onion.

Cook at 425°F for 20 to 30 minutes.  The times really depend on the size and type of oven you have.  Mine usually takes the full 30 minutes, but we only have a small counter top convection oven on our boat.

Three Easy Rice Recipes Your Kids Will Love

 

Creating meals that kids will eat without complaint can be a difficult, especially when trying to include healthy foods.   I usually try to sneak squash, carrots and other vegetables in to rice dishes.
Disguising nutritious foods inside of foods you know your kids will eat is one way to get your kids to at least ingest some vitamins and minerals. But, wouldn’t it be nice to actually introduce your kids to nutrition rather than trick them into eating it?
One ‘Superfood’ your kids probably already like is rice. This nutrient-rich food has no doubt been on your family’s table, and your child’s highchair tray, since he or she could pick up a kernel or two and aim for their mouth.
But, I suspect that as your kids got older, they lost interest in that fluffy white pile of rice on their plate. Taste buds change and mature and now they want something a bit more appealing, and can you blame them? When was the last time you ate a pile of plain white or brown rice? It doesn’t exactly tempt the palate.
Luckily, for you and your kids, there are plenty of easy, fun, and tasty ways to re-introduce your family to the wonders of rice. And, you won’t even have to hide the rice inside another food to get your kids to eat it! Here are a few fun and easy rice ideas to try on your family.

Chicken Pineapple Kabobs Over Rice
You’ll need chicken meat cut into small cubes, pineapple chunks, either fresh or canned in natural juices, a can of natural pineapple juice if you wish, and other vegetables your child may like, such as grape tomatoes. You’ll also need cooked brown or enriched white rice and skewers soaked in water for 30 minutes. The ‘recipe’ is simple. Cook the rice according to package directions, but substitute at least some of the water with pineapple juice.
Preheat your broiler and lightly oil your broiler pan. Alternate the chicken, pineapple, and vegetables on skewers, then brush the kabobs lightly with good olive oil. Broil just until chicken is cooked through, turning at least once during cooking time. Serve the kabobs over a plate of cooked rice. This looks so grown up and tastes super delicious with the sweet pineapple.

Layered Arroz Con Queso With Beans
This dish is made by laying smashed pinto beans (or refried beans) in the bottom of a shallow casserole dish, then topping with a layer of cooked brown or white rice, and then spreading a layer of low fat cottage cheese over, and finally sprinkling a layer of shredded low fat Cheddar cheese or a mixture of cheese on top.
Cover the baking dish and put in the oven just until mixture is hot and bubbly. Remove from the oven and uncover the dish, then let stand at room temperature for about 5 minutes before serving. This dish is a cross between mac and cheese and nachos. What’s not to love?

Rice Crust Pizza Time
For this recipe you’ll just be making a pizza crust out of rice, then topping it with whatever your kids like, within reason, of course. You’ll need about 3 cups of cooked rice and 1 egg for a 10 inch pizza crust. Cook brown rice or white rice, or a combination. Allow the rice to cool to room temperature.
When rice is cooled, mix a whole egg into the rice, smashing it together with a fork to combine well. Add seasonings if you wish, like oregano and salt. Form the smashed rice into a ball on a work surface and cover it with plastic wrap, then use your hands to press the rice mixture into a flat circle, pizza crust style. Place the crust on a baking sheet and bake in a preheated oven at 400 degrees until browned nicely, about 10 minutes, then remove and let it cool down. While it cools, prepare whatever ingredients you want to top the pizza crust with. Add your toppings and bake for another 10 to 15 minutes or until all the toppings are nice and hot and any cheese you added has melted. Then remove, let cool slightly, and enjoy.
Most kids started out loving their little piles of rice on their highchair tray. It was fun to play with and even a few kernels found their way to the tummy. Finding super nutritious foods to get your kids to eat just got easier now that you have these simple ways to re-introduce rice into your family’s diet. Ingredients
  

  • 1 3/4 to 2 1/4 Cups All-Purpose Flour
  • 1 Envelope Pizza Yeast
  • 1 1/2 teaspoons Sugar
  • 3/4 teaspoon Salt
  • 2/3 Cup Very Warm Water 120°to130°F
  • 3 tablespoons Oil
  • Pizza Sauce Cheese and Favorite Toppings

Instructions
 

  • Preheat Oven to 425°F
  • Combine Undissolved Yeast, Sugar, Salt in a large bowl.
  • Add Water and Oil.
  • Mix until well blended, about 1 minute.
  • Gradually add enough flour until dough soft ball is formed. Dough should still be slightly sticky.
  • Knead dough on floured surface and add additional flour if needed.
  • Roll dough out in to 12 inch circle.
  • Place on greased pizza pan.
  • Top with Pizza Sauce, Cheese and Favorite Toppings.
  • Bake for 12 to 15 Minutes, until cheese is bubbly and crust is lightly browned.

Chicken Pizza

Ingredients
  

  • 4 ounces boneless/skinless chicken breast
  • 2 tablespoons onions -- dice
  • 1 cup tomatoes; drain -- dice
  • 1 teaspoon garlic -- chop
  • 1/8 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1 cup mozzarella cheese -- shredded
  • 1/2 cup peppers red, orange or yellow -- slice
  • 1 tablespoon Parmesan cheese -- shred
  • 1 12 " pre-baked pizza crust

Instructions
 

  • Spread the tomato mixture over the top of the crust.
  • Cut chicken strips over spread evenly over the tomatoes.
  • Top with cheeses mozzarella cheese.
  • Add the sliced peppers and sprinkle with Parmesan cheese
  • Bake at 450F for 8 to 10 minutes, or until cheese is melted (bubbly)

Beginners Cooking Tips

About Recipes
Recipes are cooking instructions that should be used as guides for making a specific dish. Most recipes can be made better by using your own imagination to make the dish more closely match your individual taste. If you like spicy and the recipe calls for one teaspoon of crushed red peppers, go ahead and put in two if you want. Just remember to taste as you go.

All that being said, be aware that some recipes should be followed precisely for safety. Specifically, any preserving or pickling recipes should be followed, as far as the proportions of vinegar, salt and water. Altering proportions in these recipes could lead to unhealthy food spoilage. That said, as far as that lasagna recipe you want to make, feel free to add more cheese if you like.Cooking Tips for Beginners encourages you to experiment and have fun in the kitchen.

What’s Not in the Recipe
The recipe can provide the ingredients but the cook has to provide the skill of putting it together. As you learn to cook be aware of the “look and feel” of food. For example, when making mashed potatoes, the amount of liquid added will determine if the final dish is thick, thin, smooth or soupy. Although the recipe may call for one cup of milk, you may need more or less than one cup. It depends on how you like your mashed potatoes. So how do you get what you like? By look and feel! You must learn to observe and feel the consistency of your food to ensure you get the desired final outcome.

Any recipe that calls for making a batter or dough can be altered dramatically by the consistency of the batter or dough. Cakes, biscuits, pancakes, waffles and breads, for example, all require preparing a batter or dough. With experience you will learn the look of the batter that results in what you like. You will then make the proper batter by the addition of liquid according to the “look and feel” of the batter.

Seasoning Tips
Salt is undoubtedly the world’s all time favorite seasoning. It was considered so valuable in some societies that it was used as money. Today we know that too much salt can lead to health problems in some people, but we still love our salt. As a beginner cook you should learn to use salt to enhance a bland tasting dish.

Baking Tips
1) Always pre-heat your oven to the temperature specified in the recipe.
2) Use an oven thermometer to determine the accuracy of the temperature control on your oven. You will only have to do this once. If you set the oven for 400 degrees F. and find that the thermometer shows the oven is actually 415 degrees F., you will know in the future to set the control just slightly below the 400 degree setting when you want 400 degrees.
3) When making biscuits, do not overwork the dough. Just two or three folds is all that is needed. Overworking the dough results in heavy biscuits.
4) Use the cookware specified in the recipe. If it says glass, use glass. If it says cookie sheet, use a cookie sheet. It makes a difference in the final product.
5) When baking breads or any dish calling for baking soda, baking powder or yeast, use measuring cups and spoons to measure accurately. Breads to not take well to eye-ball measurements.
6) Bleached and unbleached flours can be used interchangeably.
7) Baking powder and baking soda are not interchangeable
8) When baking pies or any dish with a crust on top, cover the outer edge of the pie with aluminum foil to prevent burning before the rest of the crust is brown.
9) Invest in a biscuit cutter and rolling pin for smooth edged symmetrical biscuits.

Food Tips
Being a good cook requires good ingredients.
1) Keep cold foods cold and sizzling foods sizzling. Along these lines, place them taking part in appropriate storeroom areas like the refrigerator before the stove.
2) Use a meat thermometer to check the doneness of meat. This will ensure with that the meat is cooked through
3) Separate meat products from other food ingredients and use different utensils and equipment for raw meats.
4) Use up fresh ingredients especially fruits and vegetables. This is as the fresher an ingredient is, the tastier the finished dish will be.
