Chicken Vegetable Rice
- 2 cups chicken breast
- 2 cups frozen corn
- 2 cups zucchini
- 1 1/2 cups carrots
- 1 cup green onions
- 2 Tablespoons soy sauce
- 3 cups uncooked rice
- Prepare rice according to package instructions.
- In skillet cook chicken in Olive oil (I like to use Tuscan Herb flavored) over medium heat, until no longer pink.
- Add in vegetables and cook until all vegetables are tender.
- Add in rice, mix well and serve.
