- 1 pound lean ground beef Turkey, Chicken or Pork can also be used
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon prepared yellow mustard
- 3/4 cup ketchup
- 3 teaspoons brown sugar
- salt and ground pepper to taste
In skillet over medium heat, brown ground beef, onions and peppers.
Drain off excess liquid.
Stir in remaining ingredients and simmer for 15 to 20 minutes, stirring frequently.

Turkey Empanadas

- 1 lb ground turkey meat
- 1 medium sweet onion finely diced
- 1/2 tsp kosher salt
- 1/4 tsp garlic powder
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- pinch ground cloves
- 2 Tbsp balsamic vinegar
- 1/2 cup raisins
- refrigerated pie crust sheets - for 2 pie crusts
In a large cast iron skillet, brown the turkey. Add the onions when the turkey is almost cooked, and continue cooking until the onions are translucent. Then add the next 7 ingredients (everything except the pie crusts) and turn heat down to low; simmer gently for 10 minutes. Remove and set aside.
Preheat oven to 375 degrees and lightly spray a baking sheet with cooking oil.
Unroll the pie crust sheets and cut both into even quarters and place on baking sheet. Spoon the mixture into the middle and fold over, matching edges of the crust. Seal the edges by pressing the tines of a fork along.
Bake in preheated oven for 20 to 25 minutes or until golden brown.
Remove and cool slightly.

Savory Prune Chicken Bake

- 2 lbs chicken pieces - bone in skin removed
- 1 cup good balsamic vinegar
- 1/2 cup good olive oil
- 2 cups water
- 1 Tbsp mixed dried herbs suggest rosemary, oregano, thyme, basil, sage, cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 medium sweet onion diced
- 1 garlic clove grated
- 8 oz prunes rough chopped
- 2 Cups cooked brown rice
Preheat oven to 400°F.
Arrange Chicken pieces in 13x9 baking pan.
Whisk together vinegar olive oil, water, dried herbs, salt and pepper.
Stir in the onion, garlic, and prunes, mixing thoroughly.
Pour the liquid mixture over the Chicken, making sure it is coated well.
Bake for 15 minutes covered with aluminum foil.
Reduce heat 325°F and bake for an additional 30 minutes or until chicken is cooked through.
Server over a bed of 1/2 Cup cooked brown rice.
